It’s a beautiful day and should be unseasonably warm for the next few days, until the next storm rolls in and the temps drop by 20 degrees. It almost sounds like I live in Texas!
I made pastrami from a packaged corn beef that I picked up at the market. I soaked it for a couple of days to pull out the excess salt, then seasoned it and smoked it for most of the day. I let it sit in the refrigerator for a couple of days then sliced it today. It made a pretty good Reuben when sitting on top of some nice rye bread.
