I really have to work on the taxes this weekend, as much as I hate to. I’ll have to file for an extension this year (first time, ever), because I’m missing info from “the family business”.
dv8 -- your frittata sounds delicious. I need to remember to add that to our dinner rotation when the weather warms up a bit.
A frittata is a great way to get rid of some leftovers in the fridge and it always seems fancier and more elaborate than it is.
I might try one with ricotta cheese sometime. I just thought of that, and I know I have some in the fridge. (if it’s still good, it’s been in there for a while)

Our dolts and idiots have definitely come home to roost, Fatwa.
So, I slept all the way from yesterday afternoon to around 7:30 this morning.
I got up and inspected the contents of the refrigerator, Harper had culled and chopped up some veggies that had been in there for a while.
So despite their age, they looked and smelled very fresh and ready to be good ingredients in something.
I decided to cook them into a frittata with some chicken I have in the freezer. Onions, garlic, zucchini, carrots, mixed peppers.
Once I added the eggs, I pushed some sharp cheddar cubes into it, put it in the broiler, and then topped it with some grated cheese, parmesan, etc.
Now, because I did all that cooking, I’m not hungry. But I’m letting it cool some, and I’ll have a slice in a bit.
Sounds like a good meal, Dv8.

You and me both, Paddy -- started on taxes a couple of weeks ago and did the easy part.Not it’s the rest of it that will take a day to sort out.
