How did teh bone broth turn out?

BK update: Was up all night worried about insurance paperwork bullshit re her “leave” (which, worst case, could result in losing her job and insurance); it’s been a major stressor. Fuck the uncaring, heedless people at New York Life, who apparently cannot find their own asses, much less do their jobs.

We think it’s getting handled -- with the help of her HR people, docs’ offices, etc. She’s asleep right now. (Hey…it’s not like chemo’s a breeze even when you’re not worried about the possibility of ruinous medical bills.)

HH-A update: They’re still playing games; have a conference call with attorney on Friday. Arbitration company seems deeply unhappy with them; while they’re supposed to be a neutral party, I’m guessing HH-A’s behavior will not win them any friends.

Bone Broth still cooking will take 36 more hours.

This one is Pork, Chicken and Beef bones combined. Smells really good cooking.

I did the Pre-cook/blood bath thing, for several reasons. The resultant broth is much clearer when you do that. Also it smells much nicer while cooking. Also, I had some smoked pork hocks, and you have to get the salt out of em.

So for both reasons, you bring em to a boil and then let them sit for several hours and then drain the water along with most of the salt which leaches out. Then you add more water and cook them for 48 hours, along with whatever extra fat you’re adding and some onion and garlic, you can add other aromatics, but you don’t want to add salt, because you do that when you make a serving.

Better ingredients this time, so I’m guess it will be pretty good. I guess we’ll see.

Got done with the night shift and the Big Route in just under 12 hours. I’ve not been rushing through so much lately, because we’re down to one AC unit, so it’s not as cool inside as it used to be.

I think they are fixing the second unit, or replacing it, but neither has happened yet.

We’ll see on the bone broth. It still had too much salt, so I had to drain it and start again with fresh water and aromatics.

Stovetop. It’s in my biggest commercial stockpot. A few gallons at least.

Generally smoked hocks are not ideal, but they’ll do as at least part of it. I also had some regular pork bones. I got some beef joints of some kind also, and the bones of one roasted chicken after I took the meat off of it and put it in the fridge. Kept the bones and the fat/skin. Also had a flat of chicken fat I bought at the store also. I might have to put lard into it, or cook up a pound of bacon and put the the fat into the broth.

If you get enough collagen from the joints, then it helps to suspend the fat and keep it from just floating on top. If you don’t, you can add Gelatin, which is essentially the same thing.

So…

I kept trying to get myself to buy a new microwave for over the stove/range hood. But I never got around to it. Ours broke a few years back. We did fine without it, but one day, I just bought on at walmart for 39.99 and put it on the counter. Which sorta kept me from pursuing the stove top microwave even more.

But we found one being sold in the neighborhood for $75 buckos. It’s at least 20 years newer than our broken one, so it should last a good long while. So since the price and age was so good, I ran and got it this morning.

Now I have to install it. I have a friend who likes doing these kind of projects, so we’ll probably get it in at some point. Right now, it’s still in our car.
