After church, Mrs. Paddy and I are finally going to have time to take down my MiL’s Christmas lights and put away her Christmas tree. There should be a break in the rain about the time we’ll be working, so that’s good.
I bought a prime rib for Christmas dinner, based on the number of people that we anticipated coming. When a few people came down ill, I sliced off a few ribeye steaks and froze them before cooking the rest of the rib roast. Tonight, Mrs. Paddy and I are having one of those steaks, along with some roasted potatoes and a béarnaise sauce. It’s been a long, long while since I made either hollandaise or béarnaise, but it seems to have turned out well. Now let’s see how the entire dinner works together.
The recipe I used for the béarnaise called for basil, instead of tarragon. I really like that change. The basil added a little spiciness that the tarragon lacks and didn’t overwhelm the other flavors.
