I made cacio e pepe for dinner last night. It’s a simple pasta dish with romano cheese and pepper. The difficulty lies in getting a creamy sauce with only cheese and pasta water. I’ve made it a couple of times with limited success, so I watched a few more youtube videos, settled on a technique, then found a recipe. Most of the videos focus on technique and don’t give you amounts, but I found one that seemed reasonable. The dish turned out great, except for one little problem. Too. Much. Pepper. I need to cut the amount of pepper in half.

Huh. I’ll have to give that a try -- I made some fish soup over the weekend that came out yummy.
